These super easy cookies are egg free.  The three essential ingredients are staples in most pantries. It takes no time to mix up and they bake in 15 minutes. Just too easy!! The taste and consistency of these simple cookies are wonderful, almost like butter cookies. On the subject of butter, there is one very important note. Soften butter is critical to the success of this recipe.  The easiest way is to let the butter soften at room temperature, it will take 30 – 60 minutes.  To speed up the time, cut the stick into small cubes.  If you want it soft immediately, cut the stick into 6 squares and place between 2 sheets of plastic wrap. Using a rolling pin, meat mallet, or the flat bottom of a glass, pound the butter into a thin layer.  The butter will now be ready to use.  While delightful plain, these are very easy to zhoosh up and greatly enhance their plate appeal. I really like the buttery taste, but if you want you can add an extract or fruit zest.

As easy as 1-2-3, you have cookies!
1 Cup Flour, 1/2 Cup Butter (1 stick) and 1/3 Cup Sugar — no eggs
Using a cookie scoop or spoon form batter in small balls. If desired, roll in sugar.
If using sprinkles, slightly flatten the ball with the palm of your hand. Gently press in sprinkles . Line baking sheet with a silicon mat or parchment paper.
Let cookies rest 5 minutes before carefully transferring them to a cooling rack.

Ingredients

  • 1 cup all-purpose flour

  • ½ cup (1 stick) butter, softened

  • ⅓ cup white sugar

  • Optional: 1 teaspoon vanilla or almond extract, ½ teaspoon citrus zest, such as lemon, lime, or orange, white sugar, sprinkles, frosting

Directions

  • Preheat oven to 325°.
  • Use a mixer to combine the sugar and butter, mixing until the butter is almost white and the mixture is light and fluffy. Don’t rush, this will take a few minutes! Slowly add the flour, a little at a time. If you want to add additional flavor (vanilla or almond extract, or citrus zest), add it now. Mix until the flour is thoroughly combined. The mixture will appear crumbly, with your hands form into a ball. Dough should feel smooth.
  • Form the cookies into 1″ balls, with a cookie scoop or spoon. Place 2 inches apart on an ungreased baking sheet (I prefer to line my baking sheet with parchment paper or a silicone mat to avoid sticking). Slightly flatten the balls with the palm of your hand. Optional: Roll the balls in white sugar before flattening OR add sprinkles after flattening.
  • Bake for 15 to 17 minutes, or until the edges of the cookies are lightly golden. Let cookies rest for 5 minutes. CAREFULLY, move to a cooling rack. Once cooled, if desired, frost or decorate cookies.
