Sloppy Joes

This is a retro recipe from my youth!  It’s pure comfort food.  Perfect for a hearty lunch or light dinner on a cold, gloomy day.  It pairs well with tater tots and baked brown beans!  I always keep a can of Cambell’s Chicken Gumbo Soup in my pantry – just for this recipe.  The other ingredients, I usually have on-hand.  This isn’t an attractive dish, but it makes up for it with taste.  To zhoosh it up, you can try substituting steak sauce for the ketchup or spicy mustard instead of yellow.  However, I think, this is perfect has is!

  • 1 lb ground beef
  • 1 small onion – chopped
  • 1 can chicken gumbo soup (I use Campbell’s)
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 1 can water (use the soup can)
  • Pinch salt & pepper
  • Hamburger buns for serving
  1. Brown ground beef with chopped onion in a large skillet over medium heat. Drain off grease.
  2. Stir in soup, water, ketchup, mustard and salt & pepper. Reduce heat to med-low. Simmer (uncovered) until liquid is absorbed, about 40 minutes.
  3. Serve on toasted hamburger buns.

What this lacks in plate appeal, it wins back in pure comfort! Sloppy Joes are the perfect solution to a cold & gloomy day.
